This sweet and spicy ginger jello recipe can be prepared quickly with easy prep, and can be made with just 3 ingredients!

So apparently, Grandma was right – ginger IS great for colds. Known for their anti-bacterial and anti-viral properties, ginger is a rockstar of immune boosters. I’ve started buying and freezing slices so that I could make ginger tea whenever I feel a cold coming.
While I do use a lot of grated ginger in my cooking (stir-frys, soups, sauces, etc. ), I’ve always been a sweets person and been wanting a dessert recipe that celebrated the spicy-sweet flavor of ginger.
That’s when I spotted the pot of ginger tea I’d made the night before. And eureka! I had to try making ginger jello 🙂
Made with only 3 ingredients – ginger tea, sweetener and gelatin, this ginger jello is everything I could have hoped for in a quick and simple, healthy and sweet dessert.
Here’s how I made it.
Ingredients Used to Make Ginger Jello
**I’ve linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section). - Ginger Tea – Ginger tea is ridiculously easy to make, and all that’s required is for you to boil ginger slices in water. The instructions are below, but you can also purchase ginger tea bags and seep multiple bags in hot water.
- Sweetener of Choice – You can use sugar, honey, or any liquid or granulated sweetener of choice for this recipe. I used a mix of stevia powder and honey powder, since stevia alone can make the ginger jello taste bitter.
- Unflavored Gelatin – you can find these usually in the baking section. I haven’t tried with other gelatin but they should work fine. Below is the brand of gelatin I used.
Knox Unflavored Gelatin (0.25 Oz Envelopes, Pack of 32)

How to Make Ginger Jello from Scratch
STEP 1

First, make ginger tea. Boil about 1/4 cup of sliced ginger in 4 cups of water for at least 30 minutes on medium-low heat (on a simmer). Alternatively, you can seep 8 ginger tea bags in 4 cups of hot water for 10 minutes.
STEP 2

While ginger tea is boiling, dissolve 4 packets of gelatin power in a 1/2 cup of room-temperature water. Set aside for 5 minutes.
STEP 3

Once the ginger tea is ready, pour up to 4 cups of the hot tea into the prepared gelatin mixture and whisk until no lumps remain. Note that depending on how long you simmered the ginger tea you may just have less than 4 cups.
STEP 4

Pour the entire mixture into a glass pyrex pan or individual ramekins. Let cool slightly and place in the fridge overnight to let the gelatin set completely.
Recipe Variations and Optional Add Ins:
- Ginger-Lemon Jello : try adding 1/4 cup of lemon juice to the ginger tea before using
- Honey-Ginger Jello: instead of stevia, add honey to sweeten! (make sure to taste before you put the jello in the fridge)’
- Cinnamon Ginger Jello – when making ginger tea, add a stick of cinnamon to the boiling water and let it simmer at least 5 minutes.
- You can also pour the jello mixture into silicone molds

HOW TO STORE
- Jello has to be refrigerated, and probably not recommended to be at room temperature for more than 6 hours.
FINAL TIPS
- Be sure to use a microwave-safe bowl (preferably glass, like this one)
- Setting time will vary based on the size of the container. If you are short on time you can pour the jello mixture into smaller ramekins or silicone molds so that it sets faster.
