I love experimenting in the kitchen, but there are many many times my desserts don't turn out right. Usually, I get rid of the evidence by mixing it into a waffle batter and pressing it on hot iron. Sometimes the recipe is 90% there and it just seems like a shame for me not to share. Here are some examples. Full recipe not included.
Strawberry Tofu Mochi:

This just didn't set. Maybe it's because the tofu is contributing all that moisture. Guess I was over-ambitious and put in too much 😅
Peanut butter cookie stuffed with a white Reeses cup
I liked this cookie, I really did. Made with almond flour, coconut flour and peanut butter, it was a flavorful, nutty-sweet cookie that reminded me of those Nutter Butter sandwich cookies. But the problem was with how dry and crumbly it was. Right after the photo, the cookie broke into tiny little crumbly pieces. I felt like it could do with a little more moisture--next time, by adding some applesauce or honey? It's on my to-do list for now.
