Oat Milk Jello (Made in the Microwave)

I always try to create recipes that use limited ingredients and effortless methods of making.  Today's recipe was mere an experiment that turned into a yummy one-bite dessert and snack. I call them Oat Milk Jello. Yes! I turned the delicious stevia-sweetened oat milk into jelly, sweet, low calorie, and low carb snacks. And I know that you will be surprised to see that I made them with just three ingredients and in a microwave.

You just need the sweetened Oat Milk, and gelatin, and I guarantee it is a foolproof recipe that you can just by mixing and cooking them in the microwave. It is much more satisfying and tastier than the store-bought jello packs with artificial sweeteners. I am sure that you will love it and will be excited to share around too.

Ingredients Used to Make Oat Milk Jello

**I've linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section).   • Oat Milk - I used oat milk, but you can also use almond, cashew, coconut, rice milk, soy milk, etc. You can also use dairy milk.

  • Sweetener of Choice - You can use sugar, honey, or any liquid or granulated sweetener of choice for this recipe. I used liquid stevia. You can also use a sugar-free substitute such as Monk Fruit Sweetener or Alluose.
  • Unflavored Gelatin - you can find these usually in the baking aisle. I haven't tried with other gelatin but some beef gelatins can be used to make jello, like this one. Below is the brand of gelatin I used. Note that gelatin is not suitable for vegan diets.

How to Make

How to Make Oat Milk Jello from Scratch

STEP 1

Oat Milk Jello (Made in the Microwave) - oat milk jello

In a microwave safe glass bowl or extra large measuring cup, dissolve 4 packets of gelatin powder in a 1 cup of oat milk. Set aside for 5 minutes. (Use 5 packets if you like your jello firmer.)

STEP 2

Microwave oat + gelatin mixture in the microwave for 90 seconds until the mixture is hot (but not boiling).

STEP 3

To the heated mixture, pour about 3 cups of oat milk (cold is fine). Add sweetener (like liquid stevia) to desired sweetness. I used about 1 tsp liquid stevia. Whisk well

STEP 4

Pour the entire mixture into a glass pyrex pan or ladle into individual ramekins. TIP: use ladle when transferring to smaller containers to prevent spills (speaking from experience 😅).

STEP 5

Let cool slightly and place in the fridge overnight (about 5 hours) to let the gelatin set completely. Cut with a sharp knife. Enjoy!

Recipe Variations and Optional Add Ins:

  • With natural flavoring / extracts. Feel free to add a teaspoon of vanilla extract (I didn't feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as caramel flavoring, hazelnut extract or almond extract.
  • Feel free to experiment on using different flavoring syrups, such as hazelnut, caramel or chocolate.
  • You can also pour the jello mixture into silicone molds

What are some ways you can eat these?

  • In a ramekin cup, topped with light whipped cream
  • in smaller individual servings (see how I did that with my almond milk coffee jello below)

How to Store

  • Jello has to be refrigerated, and probably not recommended to be at room temperature for more than 6 hours.

Final Tips

  • Be sure to use a microwave-safe bowl (preferably glass, like this one)
  • Setting time will vary based on the size of the container. If you are short on time you can pour the jello mixture into smaller ramekins or silicone molds so that it sets faster.
