Oat Milk Jello Made in the Microwave

Ingredients
  

  • 4-5 packets (or ¾ oz) of unflavored gelatin I used Knox
  • 4 cups oat milk
  • Liquid stevia to taste

Instructions
 

  • In a microwave safe glass bowl or extra large measuring cup, dissolve 4-5 packets of gelatin powder in a 1 cup of oat milk. Set aside for 5 minutes. (Use 5 packets for a firmer jello)
  • Microwave the milk-gelatin mixture for 90 seconds until the mixture is hot (but not boiling).
  • To the heated mixture, pour about 3 cups of room temperature or oat milk.
  • Add sweetener (like liquid stevia) to desired sweetness. I used about 1 tsp liquid stevia. Whisk well.
  • Pour the entire mixture into a glass pyrex pan or ladle into individual ramekins. TIP: use ladle when transferring to smaller containers to prevent spills (speaking from experience). Let cool slightly and place in the fridge overnight (about 5 hours) to let the gelatin set completely.
