This sweet, cold and jiggly almond milk coffee jello is a delicious low-calorie, low-carb snack that’s made with stevia-sweetened almond milk, instant coffee and gelatin! Here is a quick and fool-proof method of making coffee jello in the microwave and just 4 ingredients.

I love fun food textures! Whether it’s crispy, chewy, gooey, flaky, velvety, fudgy, mochi, or jiggly, textures make the eating experience so much more fun and enjoyable.
So maybe it’s no surprise–that my recent obsession has become jello. You can eat it as a snack, serve it up as a fancy dessert. And it can also be any flavor, fruit juices, tea, wine, coffee, you name it!
Since most of the boxed jello are artificially flavored and sugar-sweetened, I wanted to make jello that’s made from clean, simple ingredients that’s both delicious but healthy.
Here’s how I turned a simple almond milk coffee beverage into a delicious gelatin snack!

Ingredients Used to Make Almond Milk Coffee Jello
**I’ve linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section). - Almond Milk – I used unsweetened almond milk, but you can also use cashew, coconut, oat milk, soy milk, rice milk etc. You can also use dairy milk.
- Instant Coffee Granules – you can also use coffee extract or espresso powder.
- Sweetener of Choice – You can use sugar, honey, or any liquid or granulated sweetener of choice for this recipe. I used liquid stevia. You can also use a sugar-free substitute such as Monk Fruit Sweetener or Alluose.
- Unflavored Gelatin – you can find these usually in the baking aisle. I haven’t tried with other gelatin but some beef gelatins can be used to make jello, like this one. Below is the brand of gelatin I used. Note that gelatin is not suitable for vegan diets.

How to Make Coffee Jello from Scratch
STEP 1

In a microwave safe glass bowl or extra large measuring cup, dissolve 3 packets of gelatin powder in a 1/2 cup of almond milk. Set aside for 5 minutes.
STEP 2

Whisk the almond milk-gelatin mixture and Add 2 Tbsp of instant coffee granules. Whisk (the coffee does not have to completely dissolve yet).
STEP 3
Microwave the milk-coffee mixture for 90 seconds until the mixture is hot (but not boiling). The coffee granules should have dissolved completely by now.
STEP 4

To the heated mixture, pour about 4 cups of cold almond milk. Add less milk (3 cups) if you want a firmer jello. Add sweetener (like liquid stevia) to desired sweetness. I used about 1 tsp liquid stevia. Whisk well. Whisk well.
STEP 5

Pour the entire mixture into a glass pyrex pan or ladle into individual ramekins. TIP: use ladle when transferring to smaller containers to prevent spills (speaking from experience 😅). Let cool slightly and place in the fridge overnight (about 5 hours) to let the gelatin set completely.
Recipe Variations and Optional Add Ins:
- If you want clear coffee jello (transparent), use water instead of almond milk
- With natural flavoring / extracts. Feel free to add a teaspoon of vanilla extract (I didn’t feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as caramel flavoring, hazelnut extract or almond extract.
- Feel free to experiment on using different coffee flavoring syrups, such as hazelnut, caramel or chocolate.
- You can also pour the jello mixture into silicone molds



What are some ways you can eat these?
- In a ramekin cup, topped with light whipped cream
- Pour into a loaf pan, and served in slices


How to Store
- Jello has to be refrigerated, and probably not recommended to be at room temperature for more than 6 hours.
Final Tips
- Be sure to use a microwave-safe bowl (preferably glass, like this one)
- Setting time will vary based on the size of the container. If you are short on time you can pour the jello mixture into smaller ramekins or silicone molds so that it sets faster.
