Here’s a ridiculously easy, no-bake, 3-ingredient Easter eggs recipe that’s made with peanut butter powder (like PB Fit and PB2) and applesauce! The defatted peanut butter powder keeps this recipe low calorie and low fat. Meanwhile, the addition of applesauce provides the needed moisture and subtle sweetness to the Easter Eggs. Plus it gives these homemade treats a healthy boost of fiber and vitamins that the store-bought Reeses eggs don’t have.

  • Peanut Butter Powder – like PB Fit, or PB2. I used a Sugar Free PB FIt powder for this recipe

Mix PB Fit powder and 1/4 cup of applesauce together.

For a creamier peanut butter filling, add the rest of the applesauce. For a thicker, fudgy texture, leave out the extra applesauce.

Divide the dough into 8 pieces. Roll into balls, then slightly flatten to get the egg-like shape

Let the peanut butter filling cool in the fridge or freezer until firm enough to coat in chocolate.

How to Make PB Fit Easter Eggs (VIDEO)

Recipe Variations and Optional Add Ins:

  • You can use other fruit purees instead of applesauce. Try mashed bananas, cooked sweet potato, or pumpkin puree. You can also add more texture and flavor to the filling by adding nuts, seeds or flavorings. For example try:
    • Banana Chocolate Easter Eggs – sub applesauce with ripe mashed bananas. Add 1 Tbsp of cocoa powder and a handful of chopped nuts or mini chocolate chips
    • Sweet Potato Easter Eggs – use mashed sweet potato instead of applesauce. Then add a teaspoon of cinnamon and a Tablespoon of maple syrup (this helps to sweeten and add some moisture, since sweet potato is thicker than applesauce).
    • Pumpkin Spice Easter Eggs – use pumpkin purée instead of applesauce, then add a teaspoon of pumpkin spice powder.

  • If you’re allergic to peanuts you can also use almond butter powder instead here is one brand I like to use. I’ve used it before to make my vegan 2-ingredient almond butter frosting!
  • Also, feel free to experiment with natural flavoring / extracts. Add a teaspoon of vanilla extract (I didn’t feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as almond extract

Just keep in mind that some extracts contain alcohol, and since this is a no-bake recipe, the alcohol won’t have a chance to fully evaporate. If serving this to kids, or if you’re sensitive to alcohol, be sure to use non-alcoholic extracts or flavorings. Here are some non-alcoholic brands, here: non-alcoholic vanilla extract

How to Make this Healthier

How to Store PB fit Peanut Butter Easter eggs

  • Store these Peanut butter easter eggs covered in the fridge for up to 3-5 days.
  • You can also freeze these Easter eggs in an air tight container or freezer bag. They’ll be will be good up to three months.

Final Tips

  • For a creamier mouthfeel, add more applesauce to control the consistency of the filling. The dough may be a little difficult to handle the creamier they are, but they’re more manageable once they’re cooled in the fridge.
  • Sometimes I like to add a teaspoon or two of coconut oil to the melted chocolate. This helps to thin out the chocolate so that we get an even, glossy coating on the Easter eggs. It also helps to cut down on the amount of chocolate that gets on the eggs, too.

What Can You Do with Leftover Melted Chocolate?

It’s always a good idea to melt a little more chocolate than you need so that you can ensure proper coating, but what do you do with the leftover melted chocolate? Melted chocolate hardens in cold water, so it makes it a pain to clean if there’s a lot left over. Here’s what I do when that happens. Stir in chopped nuts or seeds to make nut/seed clusters! All you have to do afterward is drop spoonfuls of this chocolate-nut-seed mixture and let it harden. It’s one of my favorite snacks to eat when I’m craving something unhealthy but feeling deserving of something indulgent 🙂

    Made this for Easter, and our family loved it! I added mini chocolate chips and needed a little more applesauce than 1/3 cups to keep the dough together.

    I tried using mashed bananas like you said and it was fantastic with some cocoa powder and chocolate chips in to the dough. Great recipe! This is a genius hack for quick snack idea.
