Ingredients used to make Chocolate Coconut Easter Eggs

- Collagen Peptides - I used Vital Proteins Collagen Peptides Powder for this recipe. You're welcome to substitute with other brands of collagen peptides, but I would not try substituting with other protein powders (i.e. whey, casein, pea, hemp, brown rice, egg protein, etc) since collagen behaves very differently from other types of protein powders and is not interchangeable.
- Coconut Flour - Coconut flour is great for those allergic to gluten and wanting a low-carb option. While it’s called coco-nut it’s actually nut-free because this flour is made from coconut flesh (which is a fruit, not a nut) that’s been dried and then grind into small flour particles. Here's the Coconut Flour I like to use.
- Sugar of Choice – I used monk fruit sweetener in this recipe to keep this recipe low-sugar and low carb, but raw cane sugar, coconut, date, and maple sugars are perfectly acceptable substitutes.
- Almond Milk - I used unsweetened almond milk, but any milk (dairy or dairy free) works in this recipe. You can even use water.
- Chocolate Chips - you can use any chocolate chips (or chopped chocolate) in this recipe. I like this lower sugar, stevia-sweetened brand. If you want, you can also use unsweetened chocolate.
How to Make
Chocolate Coconut Easter Eggs
STEP 2
Mix the dry ingredients first: collagen peptides powder, coconut flour and sugar. Add the coconut flakes
STEP 3
Add the almond milk
STEP 4
Next, mix in the almond milk, using your hands to knead and get the dough to come together. Add additional ½ Tbsp of almond milk if needed.
STEP 5
Divide the dough into 6 portions using a knife. Shape each portion into balls, then slightly flatten to get the egg-like shape.
STEP 6
For best results, let the eggs cool in the fridge or freezer until firm enough to coat in chocolate.
STEP 7
Melt the chocolate for glazing - place ½ cup of chocolate chips or chopped chocolate in a microwave-safe bowl and heat on high for 30 seconds, then stir. Afterward, continue microwaving in 15-second intervals, stirring each time, until the chocolate is smooth and melted, about 1 minute total.
TIP: I also add a ½ teaspoon of coconut oil to the chocolate after melting. This is optional, but it helps to thin out the chocolate so that we get an even, glossy coating. It also helps to cut down on the amount of chocolate that gets on the eggs.
STEP 8
Dip the coconut eggs into the melted chocolate and top with shredded coconut.

How to Make these Treats Healthier
- Make this even healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed, hemp seeds, or chia seeds.

How to Store Easter Eggs
- Store these easter eggs covered in the fridge for up to 3-5 days.
- You can also freeze these Easter eggs in an airtight container or freezer bag. They’ll be will be good up to three months.
Final Tips
- The biggest tip for using your hands to bring the dough together is to PRESS not KNEAD. If you use your fingers to knead the coconut-collagen dough will get all over your fingers, but if you use the flat of your palm to press instead the shaping will be so much easier!
- I always add a ½ teaspoon of coconut oil to the melted chocolate. This helps to thin out the chocolate so that we get an even, glossy coating on the Easter eggs. It also helps to cut down on the amount of chocolate that gets on the eggs, too.
Chocolate Coconut Easter Eggs with Collagen Peptides
Ingredients
- ⅓ cup collagen peptides powder see notes for scoop conversion*
- ⅓ Tbsp coconut flour
- 1 Tbsp monk fruit sweetener or any granulated sugar of choice**
- ⅓ cup sweetened coconut flakes
- 2 Tbsp almond milk, regular milk or water , may need additional ½ Tbsp
- ½ cup chocolate chips , for coating
Instructions
- Mix the dry ingredients first: collagen peptides powder, coconut flour and sugar. Add the sweetened coconut flakes.
- Next, mix in the almond milk, using your hands to knead and get the dough to come together. Add additional ½ Tbsp of almond milk if needed.
- Note: if the dough is too soft to form into balls, you can add more coconut flour ½ Tbsp at a time.
- Roll the batter into egg shapes, refrigerate for 15 minutes to set
- Melt the chocolate for glazing - place ½ cup of chocolate chips or chopped chocolate in a microwave-safe bowl and heat on high for 30 seconds, then stir. Afterward, continue microwaving in 15-second intervals, stirring each time, until the chocolate is smooth and melted, about 1 minute total.📝Note: I also add a ½ teaspoon of coconut oil to the chocolate after melting.
