  • Mix the dry ingredients first: collagen peptides powder, coconut flour and sugar. Add the sweetened coconut flakes.
  • Next, mix in the almond milk, using your hands to knead and get the dough to come together. Add additional ½ Tbsp of almond milk if needed.
  • Note: if the dough is too soft to form into balls, you can add more coconut flour ½ Tbsp at a time.
  • Roll the batter into egg shapes, refrigerate for 15 minutes to set
  • Melt the chocolate for glazing - place ½ cup of chocolate chips or chopped chocolate in a microwave-safe bowl and heat on high for 30 seconds, then stir. Afterward, continue microwaving in 15-second intervals, stirring each time, until the chocolate is smooth and melted, about 1 minute total.
    📝Note: I also add a ½ teaspoon of coconut oil to the chocolate after melting. This is optional, but it helps to thin out the chocolate so that we get an even, glossy coating. It also helps to cut down on the amount of chocolate that gets on the eggs.
  • Dip the coconut eggs into the melted chocolate and sprinkle coconut flakes or coarse salt on top if desired.
  • Wait for the chocolate to set. Enjoy!

Notes

*I used Vital Protein's Collagen Peptides Powder. I used a standard measuring cup to measure out the protein powder, but for reference: ⅓ cup of collagen peptides was equivalent to 26 grams
**For the low carb option reflected in the nutrition facts, use a sugar-free substitute such as monk fruit sweetener or erythritol. For stevia powder, be sure to convert the amount of stevia according to package directions
