Oh so refreshing and vibrant, this watermelon bowl with sweet honey and feta cheese is a delicious and fresh addition to a summer meal. Fresh watermelon, a drizzle of balsamic vinegar, a topping of feta cheese and nuts, and honey dressing are tossed in a bowl for the most refreshing breakfast with salty and sweet bites. As far as the nuts are concerned, by all means, experiment with them but adding some pumpkin seeds and walnuts is perfect for adding that mid-day energy punch. All in all, this bowl has tons of delicious flavors that make a great lunch or side salad, so take it as you like it!

- The Base: the base of this bowl is our fruit, fresh watermelon
- Flavor – I used honey to flavor (and slightly sweeten) the watermelon cubes. But you can use other liquid sweeteners of choice like maple syrup, agave syrup, or liquid stevia
- Healthy Toppings – Feta or goat cheese, walnuts and pepitas (pumpkin seeds).
- Extras – chopped basil leaves or a drizzle of good quality balsamic vinegar

Watermelon Bowl with Honey and Feta Cheese
Ingredients
- 1 cup watermelon cubes
- 1 Tbsp honey or maple syrup
- 1 Tbsp feta, goat or crumbled cheese of choice
- 1 Tbsp walnuts or pepita seeds
Instructions
- Cut watermelon into 1 inch cubes and place in a small bowl
- Drizzle with honey
- Top with crumbled cheese
- Sprinkle with some nuts or seeds of choice
- Enjoy!
