The orange color says it all. It’s yet another vegetable high in beta-carotene, a powerful antioxidant beneficial for good vision and eye health, as well as for immune health. As delicious and nutritious they are, there are some times when I’m too lazy to boil or bake them in the oven. The easiest way I know how to cook sweet potatoes is to microwave it on high for 6-10 minutes (depending on the size of the potato).
