Get ready to celebrate with a whimsical twist on classic banana bread! Our Confetti Birthday Cake Banana Bread is a delightful treat that combines the comforting flavors of banana bread with the festive fun of rainbow confetti sprinkles. The surprise cream cheese filling adds a luscious layer of creaminess, while the simple crumble topping brings a satisfying crunch to every bite.
Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, cornstarch, almond flour, salt, baking powder, baking soda, and sugar. Ensure they are thoroughly combined.
In another bowl, mix the wet ingredients: mashed bananas, melted coconut oil , almond milk, and vanilla extract. Stir until the mixture is smooth and well blended.
Gradually add the wet ingredients to the dry ingredients, stirring gently to create a smooth batter.
Gently fold in the rainbow confetti sprinkles until they are evenly distributed throughout the batter.
In a separate bowl, prepare the Cream Cheese Filling by combining the cream cheese and powdered sugar. Mix until smooth and creamy.
Pour half of the banana bread batter into the prepared loaf pan. Spoon the Cream Cheese Filling over the batter, spreading it evenly. Top with the remaining banana bread batter.
In a small bowl, prepare the Simple Crumble Topping by mixing the all-purpose flour, almond flour, sugar, and light olive oil (or melted coconut oil) until crumbly.
Sprinkle the crumble topping over the top of the banana bread batter.
Bake the banana bread in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Slice and enjoy!
Note: Store any leftovers in an airtight container in the refrigerator to keep the cream cheese filling fresh.
