Honey Filled Baked Coconut Flour Mochi Donuts

  • Use a whisk to stir all the ingredients together until well incorporated and the batter is smooth.
  • Use a ¼ cup measuring cup or large spoon to portion the batter into a well-greased donut pan (nonstick spray works well). FIll to ¾ full. ***
  • Bake 350F for 18-22 minutes, or until a toothpick inserted comes out clean.
  • Once the donuts cool completely, melt white chocolate chips in the microwave in 20 second bursts until melted, stirring in between
  • Add 1 tsp of coconut oil (optional) as well as ½ tsp of almond butter into the melted chocolate. This does 3 things: it helps to make a thinner chocolate shell, turns the white chocolate into a beautiful beige color, and also imparts a slight coconut-almond flavor to the chocolate.
  • Dip the donuts into the chocolate and then set the donuts (glaze side up) on a clean parchment paper
  • IMPORTANT: Spoon extra melted chocolate into the center of the donuts so that it seals the bottom of the donut hole.
  • Once the chocolate hardens, spoon honey into the center of the donut wells

Notes

*You can also use other flour substitutes (almond, coconut, whole wheat flour) in this recipe. Be sure to refer to my Mochi Donut Experiment to read how the results differ!
**Coconut, date and maple sugars are less processed granulated sugars I would recommend. Honey and maple syrup should also work, but I have not yet tried. For keto options, you could also use stevia (but stevia differs by brand/ form, so you’ll have to convert according to package instructions).
***I used olive oil cooking spray to grease my muffin pan. Just make sure that you get the sides of the pan, too! If you don’t have olive oil cooking spray you can use other vegetable oil sprays. You can also grease the pans with melted coconut oil.
