Greek Yogurt Protein Balls

Ingredients
  

  • ¼ cup vanilla protein powder *
  • ¼ cup coconut flour
  • cup plain Greek yogurt, strained (I used Fage 0% fat yogurt)
  • 2 Tbsp lemon zest
  • 1-2 probiotic capsules (OPTIONAL) , or a daily serving

Instructions
 

  • Mix the protein powder, coconut flour, lemon zest together in a small bowl.
  • Carefully open the probiotic capsule and empty the contents into the bowl and mix well with Greek yogurt
  • Knead until all ingredients are combined.
    Note: I find that it's best to use my hands to mix the dough because it takes some kneading and pressing to get the dough to come together.
  • Add more coconut flour if the dough is too soft, add a teaspoon or more of yogurt if the dough is too thick
  • Roll the protein dough into tablespoon sized balls
  • refrigerate for 15 minutes to set

Notes

*I used a plant-based protein powder. Whey protein powder also works, but the result will be gummier.
**You can also use vegan, dairy free (almond milk or soy milk) yogurt instead
