Instructions
 

  • Mix all ingredients together (except the white chocolate). Add more coconut flour if the dough is too soft, add a teaspoon or more of water, or almond milk if the dough is too thick*
  • Roll the batter into tablespoon sized balls, refrigerate for 15 minutes to set
  • Optional: melt white chocolate chips and drizzle over the protein balls

Notes

*While you can use any granulated sugar of choice, I used a sugar-free substitute monk fruit sweetener (erythritol was also ok) for a lower carb option. You can also omit the sugar if you don't mind the protein balls being less sweet. 
**You can use low fat or vegan (almond milk) cream cheese
***I used a plant-based protein powder. Whey protein powder also works, but the result was gummier.
****UPDATE 3/14/22: doubled the serving size on this recipe card so you can make more :)
