Almond Milk Coffee Jello Made in the Microwave

Ingredients
  

  • 3 packets (or ¾ oz) of unflavored gelatin I used Knox
  • 2 Tbsp instant coffee granules
  • 4 cups of unsweetened almond milk
  • Liquid stevia to taste

Instructions
 

  • In a microwave safe glass bowl or extra large measuring cup, dissolve 3 packets of gelatin powder in a ½ cup of almond milk. Set aside for 5 minutes.
  • Whisk the almond milk-gelatin mixture and Add 2 Tbsp of instant coffee granules. Whisk (the coffee does not have to completely dissolve yet).
  • Microwave the milk-sugar-coffee mixture for 90 seconds until the mixture is hot (but not boiling). The coffee granules should have dissolved completely by now.
  • To the heated mixture, pour about 4 cups of cold almond milk. Add less milk (3 cups) if you want a firmer jello.
  • Add sweetener (like liquid stevia) to desired sweetness. I used about 1 tsp liquid stevia.
  • Whisk well.
  • Pour the entire mixture into a glass pyrex pan or ladle into individual ramekins. TIP: use ladle when transferring to smaller containers to prevent spills (speaking from experience). Let cool slightly and place in the fridge overnight (about 5 hours) to let the gelatin set completely.
