This Applesauce Banana Bread with a Sweet Streusel Topping feels like a warm and cozy hug. With its perfect blend of cinnamon spice, almond flour and the natural sweetness that comes from the applesauce, this vegan-friendly banana bread is moist and flavorful. It's what I like to call a taste of home, a delicious trip down memory lane.
Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, cornstarch, almond flour, salt, and baking powder. Ensure they are well combined.
In a separate bowl, mix the wet ingredients: sugar, cinnamon, mashed bananas, unsweetened applesauce, olive oil, and almond milk. Stir until the mixture is smooth and thoroughly incorporated.
Gradually add the wet ingredients to the dry ingredients. Gently fold the mixture until a smooth batter forms.
Carefully fold in the chopped Granny Smith apples and walnuts to distribute them evenly throughout the batter.
Pour the batter into the prepared loaf pan, spreading it evenly.
In a small bowl, combine the ingredients for the streusel topping: all-purpose flour, brown sugar, and melted coconut oil. Mix until crumbly.
Sprinkle the streusel topping over the batter in the loaf pan, evenly covering the surface. Use a knife through the batter in a zigzag motion to get some of the streusel to get inside the batter
Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.

*The addition of cornstarch is NOT REQUIRED, but it helps reduce overmixing and makes a softer, more tender textured bread that retains more moisture. Fun fact: cornstarch is the main ingredient in pudding mixes :)
