  • ½ cup brown sugar of choice , use brown monk fruit sweetener for low sugar option
  • 1 tsp cinnamon
  • ¾ cup mashed bananas 168g
  • cup unsweetened applesauce 112g , about one 4 oz applesauce cup
  • ¼ cup light olive oil 55g
  • 3 Tbsp unsweetened almond milk

  • Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, cornstarch, almond flour, salt, and baking powder. Ensure they are well combined.
  • In a separate bowl, mix the wet ingredients: sugar, cinnamon, mashed bananas, unsweetened applesauce, olive oil, and almond milk. Stir until the mixture is smooth and thoroughly incorporated.
  • Gradually add the wet ingredients to the dry ingredients. Gently fold the mixture until a smooth batter forms.
  • Carefully fold in the chopped Granny Smith apples and walnuts to distribute them evenly throughout the batter.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • In a small bowl, combine the ingredients for the streusel topping: all-purpose flour, brown sugar, and melted coconut oil. Mix until crumbly.
  • Sprinkle the streusel topping over the batter in the loaf pan, evenly covering the surface. Use a knife through the batter in a zigzag motion to get some of the streusel to get inside the batter
  • Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.
  • Slice and enjoy

Notes

*The addition of cornstarch is NOT REQUIRED, but it helps reduce overmixing and makes a softer, more tender textured bread that retains more moisture. Fun fact: cornstarch is the main ingredient in pudding mixes :)
