Collagen Caramel Peanut Clusters

Instructions
 

  • In a small bowl, mix syrup with peanut butter.
  • Stir in collagen powder, 1 scoop at a time.
  • Stir for 1 minute, until the collagen mixture turns thick, and slightly translucent like caramel .
  • Stir in roasted peanuts until the peanuts are evenly coated in the collagen caramel mixture.
  • On a parchment lined pan or dish, drop large spoonfuls of the caramel coated peanuts, and freeze for 30 minutes until solid.
  • In a microwave safe glass bowl, melt the chocolate chips in the microwave in 20 second bursts until melted, stirring in between.
    OPTIONAL: to get a thinner chocolate coating, stir in 1 tsp of coconut oil.
  • Coat the peanut caramels in chocolate.
  • Wait for the chocolate to set, and enjoy!

Notes

*Instead of 2 Tbsp of sugar-free syrup, you can also use 2 Tbsp of maple syrup plus ½ Tbsp of water. 
**I used Vital Protein's Collagen Peptides Powder. I used a standard measuring cup to measure out the protein powder, but for reference: 6 Tbsp of collagen peptides was equivalent to 3 scoops, or 30 grams
***To make this low-carb or keto friendly, use sugar-free chocolate chips, or a stevia-sweetened kind.
