Cashew & White Chocolate Collagen Protein Balls

This recipe makes enough protein balls for 1-2 people. Please use the 2x 3x options on the recipe card for larger servings.

  • Mix the dry ingredients first: collagen peptides powder, coconut flour and sugar (I used monk fruit sweetener).
  • Next, mix in the cashew butter and 1 Tbsp of almond milk, using your hands to knead and get the dough to come together. Add additional 1 Tbsp of almond milk if needed.
  • Add the chopped white chocolate and cashew nuts.
    The dough is supposed to be very sticky, and will harden once it's cooled in the fridge. But if the dough is too soft to form into balls, you can add more coconut flour ½ Tbsp at a time.
  • Roll the batter into tablespoon sized balls, refrigerate for 15 minutes to set

Notes

*I used Vital Protein's Collagen Peptides Powder. I used a standard measuring cup to measure out the protein powder, but for reference: ¼ cup of collagen peptides was equivalent to 2 scoops, or 20 grams
**For the low carb option reflected in the nutrition facts, use a sugar-free substitute such as monk fruit sweetener or erythritol. For stevia powder, be sure to convert the amount of stevia according to package directions
